Bean Soup w/Franks

1 Lb Dried Navy Beans
8 C Water
3 C Beef Broth
1 Carrot -- Chopped
1 Celery Stalk -- Chopped
4 Slices Bacon -- Cubed
2 Sm Onions -- Chopped
Salt And Pepper -- To Taste
6 Frankfurters -- Sliced
2 Tbsp Chopped ParsleyRecipe
Soak beans overnight.
In a 3 qt saucepan bring beans, water and beef broth to a boil. Cook about 1 hour. Add carrot and celery and cook for 30 more minutes.
In a separate frying pan, cook the bacon until transparent. Add onions; cook until golden. Set aside.
Mash 2 cups soup through a sieve. Return to pot add contents of frying pan. Salt and pepper to taste. Add frankfurters -not hotdogs- and reheat for 5-10 mins.
Sprinkle with parsley and serve.
