Recipe Link: http://messageboards.ivillage.com/n/mb/message.asp?webtag=iv-fdcooking&msg=9325.3List of Ingredients 1 Tbls. oil 4 cups thinly sliced leeks 3 1/2 cups quartered mushrooms 1 Tbls. brown sugar 1/4 tsp. salt 1 (14 oz.) can beef broth 2 Tbls. red wine vinegar 1 lb. beef stew meat 2 cups sliced carrots 1 tsp. dried thyme 1/4 tsp. black pepper 1 (12 oz) bottle of beer 2 Tbls. cornstarch 1/2 cup fresh minced parsleyRecipe Heat oil in dutch oven over medium-high heat. Add beef and cook until browned. Remove from pan. Add leeks and mushrooms to pan, saute for 3 minutes. Return beef to pan, stir in carrots, brown sugar, thyme, salt, pepper, broth and beer. Bring to boil, cover, reduce heat and simmer until beef is tender. Combine cornstarch and vinegar in a bowl. Add to stew and bring to a boil. Cook 3 minutes. Add the parsley. Serves 6
