Broccoli Cheddar Soup

List of Ingredients
4 tbsp. butter
1 tbsp. oil
1 small onion, chopped
1 clove garlic, minced
4 scallions, chopped (include green tops)
1 lb. fresh broccoli, chopped
1/4 lb. mushrooms, chopped
3 tbsp. flour
2 c. chicken broth
1 1/2 c. milk
1/2 tsp. salt
2 c. grated sharp cheddar
Recipe
Melt butter & oil in heavy soup kettle; sauté onions, garlic, scallions, broccoli & mushrooms until broccoli is tender - about five minutes. Add flour and whisk until smooth and bubbly. Slowly add broth, then milk & salt. Continue cooking & stirring until mixture thickens. Add cheese and stir until melted; heat until steaming; do not boil.
