Broccoli Soup

List of Ingredients
6-7 cups broccoli
2-3 potatoes-cubed
1 onion-diced
2-3 carrots-grated
6 tsps. chicken granules
3 cups water
4 oz. mild cheddar-grated
salt and pepper to taste
4 cups half and half
butter and flour for roux Recipe
Combine veggies, granules and water and simmer to desired tenderness. Add grated cheese, stir and then add roux.
Roux: Melt butter (I use about 3 tbsp) in skillet, add flour to the consistency of paste. Add half and half, then stir constantly, until it bubbles. Add the roux slowly to the soup mixture & keep stirring while it cooks a couple minutes longer.
