1/4 cup onion, chopped
1/4 cup butter or margarine
1/4 cup flour
1/4 teaspoon salt
1/4 teaspoon pepper
3/4 cup chicken broth
1½ cups milk
1 cup broccoli, chopped
1/2 cup grated cheddar cheese
Recipe
In a saucepan, sauté the onion in butter until tender.
Stir in flour, salt & pepper; cook and stir until smooth and bubbly. Add broth & milk all at once; cook and stir until the mixture boils and thickens.
Add broccoli. Reduce heat & simmer, stirring constantly, until heated through. Remove from heat, and cheese and stir until melted. Serve immediately.
