Bun's Chicken and Rice Leek Soup

2 boneless, skinless chicken breast, that have been seasoned with pepper
EVOO
1 pkg. dry leek soup
2 cups warm water
Rice
Frozen veggies of choiceRecipe
I just lightly brown 2 b/s chicken breast season'd with a bit of pepper, in Extra Virgin Olive olive oil.
Meanwhile mix a pkg of the dry leek soup with 2 C of warm water from tap.
When chix were "browned" I dump the leek soup in there, cover it and bring to a light boil then reduced the heat to Lo and allowed to simmer about 45 minutes.
Cook the rice on the side.
When chicken is done, I remove it, and set it on a plate in a warm oven just to keep warm {lowest oven setting ~ I think mine is 170*f?}
Dump frozen mixed veggies {I think the one I generally us for this is the corn/green/yellow banana squash, bell peppers, onions, etc} into the leek soup/chicken stock on stove top and let simmer a while til the veggies were thawed and heated thru.
Then dump the cooked rice into it and stirred it a bit; then put the chicken back in!
