Cheese & Caramelized Onion Soup

2 tbps. vegetable oil
2 cups white onion, sliced thick
2 tbsp. minced garlic
1 bay leaf
2 tsp. salt
1/2 tsp. fresh black pepper
2 quarts chicken broth
3 cloves whole garlic
1 tsp. fresh basil
1 tsp. fresh chopped thyme
2 c. cubes day-old french bread
1/2 cup cream or half-&-half
1/2 cup fresh parmesan
1 tbsp. fresh chopped parsleyRecipe
In a soup pot, heat oil. When hot add onions, whole cloves and bay leaf. Season with salt and pepper. Saute onion until they are caramelized, about 7 minutes. Stir in the stock, minced garlic, basil and thyme. Bring to a boil. Reduce to simmer and cook for 40 minutes. Turn heat back up and whisk in bread and cream. Continue whisking until bread has dissolved into the soup - about 10 minutes. With a hand held blender, puree the soup until smooth. Whisk in the cheese and parsley. Season with salt and pepper.
