    List of Ingredients




    For the nuggets:

    2 cups ground uncooked chicken breast
    3 T parsley
    2 T Parmesan cheese
    1 c. fine bread crumbs
    1/4 t salt
    1/4 t pepper
    1/2 t marjoram
    3 egg whites

    For the soup:
    1 c green onions, sliced
    1 c carrots, thinly sliced
    1/4 lb fresh mushrooms, sliced
    1 T lemon juice
    1/2 t salt
    1/2 t oregano
    1/4 t pepper
    7 c chicken broth
    1 c small shell macaroni

    Recipe



    Combine all ingredients for nuggets and refrigerate for 1 hour or until mixture is firm. Form into 1 inch balls. Saute in 2 T hot vegetable oil (original version) or bake in a 350 degree oven (healthier version) until golden brown.

    For the soup: Saute mushrooms, onions and carrots in the pot you'll be using for 3 minutes. Add lemon juice, salt, oregano and pepper and mix well. Stir in the chicken broth and heat to boiling. Add macaroni; reduce heat and simmer for 20 minutes.
