1 cup chopped onion
3-4 clove garlic, minced
1 tsp olive oil
1 can chopped green chilis
1 pkg taco seasoning
1 16oz can mexican style tomatoes
1 pkg frozen corn
3 or 4 sliced carrots
1 or 2 chopped zucchini
2 cups cooked chicken
6 cups chicken broth
1/4 cup chopped fresh cilantro
4 oz tortilla chips, broken into pieces
1/2 cup monterey jack cheese, grated
Recipe
In 5 qt saucepan over medium heat, saute onion and garlic in oil 3 to 4 minutes or until translucent. Stir in chilis, add taco mix, cook 1 minute.
Add tomatoes, breaking up with spoon. Stir in broth, bring to a boil. Add corn, carrots, zucchini and chicken. Reduce heat to low and simmer 25 minutes. Add cilantro.
To serve, top bowls with tortilla pieces and cheese.
