2 tsp veg oil
1 lb skinless, bonless breast halves, cubed
1/2 lb kielbasa sausage, cut into 1/2 inch pieces
1 1/2 cups picante sauce (I use 1 cup)
1 tsp ground cumin
1 14 oz can whole peeled tomatos, cut up (I use diced or Rotel)
1/2 cup water (I use 1 cup)
1 cup frozen kernel corn (drained canned is fine too)
1 15 oz can kidney beans
Cheddar cheese, sour cream, fresh cilantro for garnish.
Recipe
Heat oil in dutch oven over med-high heat. Add chicken and sausage in 2 batches until chicken is browned, stirring often. Remove meats from pot, set aside and pour out fat.
Add picante sauce, cumin, tomatos, water and corn to pot. Heat to boil. Return meats to pan, reducing heat to low. Cover and cook 20 mins. Add beans and heat through.
Garnish with Cheddar cheese, sour cream and cilantro.
