Country Sausage Stew

List of Ingredients
1 tablespoon olive oil
1 pound low-fat smoked sausage, cut into 1/2" slices
2 large onions, cut into 6 wedges each
2 teaspoons all-purpose flour
2 cans diced tomato, undrained
1 cup baby carrots
4 red potatoes, cut into 8 wedges each (I use about 8-10 and cut them into quarters
only, but I buy the real small ones)
1/2 teaspoon dried thyme
1 green bell pepper, cut into large piecesRecipe
Heat oil in large saucepan or Dutch oven over medium heat until hot. Add sausage and onions; cook 5 minutes, stirring occasionally.
Add flour; mix well. Stir in all remaining ingredients except bell pepper. Bring to a boil. Reduce heat to low; partially cover saucepan and simmer 15 minutes.
Add bell pepper; cook, uncovered, 8 to 12 minutes or until vegetables are crisp-tender
Note: In the past, the green pepper has been too strong, so this time around I'm subbing a red bell pepper and throwing it in with the sausage and onions for a longer cooking time. Will probably cut it smaller as well.
