    Garlic, Black Bean & Sausage Soup

    List of Ingredients

    12oz. Mild Italian sausage
    1 1/2 C chopped onions
    10 cloves garlic, minced
    1/2 tsp Fennel seed crushed
    2 -15oz cans black beans rinsed and drained
    1 can beef broth
    Dash ground red pepper (optional)
    1/4 C dairy sour cream
    1/2 C chopped tomatoes
    2 TBSP fresh oregano

    Recipe

    In a saucepan, cook sausage, onion, garlic and fennel seed for about 10 minutes. Drain

    Stir in beans, beef broth and bring to boil. Reduce heat and simmer covered for 15 minutes.

    Mix red pepper in sour cream if desired.

    Just before serving stir in tomatoes and oregano into soup and heat through.

    Top with sour cream & serve.

    Makes 4 servings
