Garlicky Potato Soup

List of Ingredients
1/2 cup minced onion
1 tsp. olive oil
8-10 cloves garlic
7 cups potatoes, peeled & diced
2½ cups chicken broth
1/2 cup water
1 cup buttermilkRecipe
In a large, heavy pot, saute onions in olive oil just until tender. Once onion is tender, stir in garlic, potatoes, chicken broth and water. Bring to boil, reduce heat and simmer until potatoes are tender. Mash in pot with potato masher, or puree in blender and return to pot & stir in
buttermilk. Serve.
