    1/2 large onion, chopped
    1 large rib celery, chopped
    2 cloves garlic, minced
    1 tbsp. oil
    4 smoked ham hocks
    2 cans red beans - don't drain
    1 can low-sodium chicken broth
    1 large bay leaf
    1 cup tomato sauce
    1 tsp. worcestershire sauce
    1/4 tsp. tabasco sauce
    1/8 tsp. cayenne
    1/2 cup brown rice

    Saute onion, celery and garlic in oil until tender-crisp. Add remaining ingredients except rice. Bring to boiling, then reduce to simmer for several hours until meat begins to fall off the bone. Remove ham hocks and debone, returning meat to bean mixture. Bring to boiling and add rice; reduce heat, cover and cook until rice is tender, about an hour for brown rice; less if you substitute white, converted or minute rice.

    Remove bay leaf and serve.
