2 or 3 chicken thigh pieces
1 cup chopped onion
1 cup chopped celery
1 cup sliced carrots
1 cup corn
1 cup baby lima beans
2 quarts chicken broth
dash of cayenne
1 tsp. worcestershire sauce
either boughten or homemade noodles (recipe below)
Recipe
Sauté chicken until tender; cool, bone & dice. Sauté onion, celery and carrot in chicken drippings. Combine chicken & sautéed vegetables with chicken broth, adding corn, lima beans, cayenne & wooster. Simmer until vegetables are done. Add noodles & cook about 15 minutes longer.
HOMEMADE NOODLES:
2 eggs
¼ - ½ tsp. salt
1/4 tsp. baking powder
flour as needed
Beat together eggs, salt & baking powder. Stir in as much flour as possible, then knead in some more to make the dough as stiff as possible. Roll out very thin and cut into 1/4" strips about 2" - 3" long. May be cooked immediately, or allowed to dry somewhat before cooking.
