    List of Ingredients




    8 ounces hot Italian turkey sausage
    ½ onion, diced
    3 cloves garlic, crushed
    2 cups reduced-sodium chicken broth
    1 can (14 ounces) diced tomatoes
    ½ cup dried pasta (small shells and shapes work best)
    2 cups fresh spinach leaves
    2 tablespoons fresh thyme
    2 tablespoons fresh oregano
    1 tablespoon fresh basil
    Salt and pepper, to taste

    Heat a large saucepan over medium-high heat. Add sausage links and brown on all sides. Remove the sausage and add the onion and garlic. When the onions and garlic are browned and fragrant, add the chicken broth and scrape the bottom of the pan with a wooden spoon to loosen any browned bits.

    Add all of the remaining ingredients and simmer until the pasta is tender. Slice the sausage into pieces of desired thickness and return to the pan.

    Makes 4 servings


    Nutrition facts per 1½-cup serving: 220 calories, 6 g fat (3 g saturated), 52 mg cholesterol, 1,000 mg sodium, 2g fiber, 15g carbohydrates and 18 g protein.
