2 C Low Sodium Chicken Broth
1 C Potatoes -- Peeled And Diced
1/2 C Onion -- Chopped
1/2 C Broccoli Flowerets -- Chopped
1 Med Carrot -- Coarsely Shredded
3 Tbsp Cornstarch
1 12 Oz Can Evaporated Skim Milk
3/4 C Cheddar Cheese -- Shredded
Recipe
Combine broth, potatoes, and onion in a large saucepan; bring to a boil.
Reduce heat, cover and cook 10 minutes or until veggies are tender. Mash potato cubes against the side of the pan using a fork to thicken. Stir together cornstarch and a little of the milk. Add broccoli and carrot. Cook and stir until thickened and bubbly. Cook and stir 2 minutes more. Stir in cheese till just melted.
