    Quick Jalapeno Corn Soup

    List of Ingredients




    2 tsp oil
    1 onion, chopped
    2 garlic cloves, minced
    2 1/2 cups corn kernels
    2 red potatoes, pelled and diced
    1 jalapeno pepper, seeded and chopped
    3 cups chicken broth
    1/4 tsp pepper
    1/2 red bell pepper, seeded and diced
    1 tablespoon cilantro

    Recipe



    Heat oil in skillet and saute onion until softened and beginning to brown. Add garlic and stir about 15 seconds. Stir in corn, jalapeno, and potatoes; cook until the corn starts to soften, about 3 minutes. Add the broth and ring to a boil; reduce heat and simmer, covered, about 15 minutes. Transfer to a food processor and add the pepper, (taste and see if it needs salt- the broth can be pretty salty). Process until pureed. Serve, sprinkled with the red bell pepper and cilantro. About 6 servings.
