Salmon Chowder II

4 slices bacon
1/2 cup chopped onion
3½ cups chicken broth
1 5½-oz box scalloped potato mix
1 can whole kernel corn, undrained
black pepper to taste
1 pound salmon filet
1½ cups half & half
1/2 tsp. dill weed, crushed
Recipe
Dice bacon and fry in large saucepan or soup kettle until crisp. Drain on paper towels. Add chopped onion to bacon grease and cook until it has softened a bit. Add chicken stock, scalloped potato mix, undrained corn and fresh ground pepper to taste. Bring to a boil; simmer for about 20 minutes.
Meanwhile, dice salmon into 1/2 inch to 3/4 inch cubes. When potatoes are rehydrated but still a little firm, add salmon, bacon and dill. Cook for 5 more minutes. Add half & half; cook until heated through, stirring constantly. Serve immediately.
Garnish with sliced green onion, if desired.
