Stuffed Cabbage Soup

1 Tbsp oil
1 lb stew beef, cut into small chunks (could also use 1 lb hamburger)
1 pkg coleslaw mix
1 large onion, chopped
1 28oz can crushed tomatoes
2 cans beef broth
1 cup water
1/2 cup brown sugar
1 Tbsp lemon juice
1 tsp salt
1/3 cup long grain white rice Recipe
1) Heat oil in Dutch oven over medium heat. Add beef; saute until brown. Add coleslaw mix and onion. Cook, covered, 4 mins stirring after 2 mins. Add tomatoes, beef broth, water, brown sugar, lemon juice and salt
2) Bring to boil. Add rice; reduce heat to medium-low. Simmer, covered 45 mins or until beef and rice are tender.
