    Tortilla Soup

    List of Ingredients

    1 8-oz can tomatoes
    1 med onion, chopped coarsely
    1 clove garlic
    2 tbls fresh cilantro
    1/4 tsp sugar
    4 cups chicken broth
    6 6 in tortillas
    cooking oil
    1 cup shredded monterey jock or longhorn cheese

    Recipe

    In blender, combine undrained tomatoes, onion, garlic, cilantro and sugar. Cover and blend till nearly smooth. Turn into a large saucepan; stir in chicken broth. Bring to boiling; cover and simmer for 20 mins.

    Meanwhile, cut tortillas into 1/2-in-wide strips. Fry strips in 1/2 inch hot oil for about 40-50 seconds or til crisp and lightly browned. Drain on paper towels. Divide fried tortilla strips and cheese among soup bowls. Spoon soup over the top.

    * I added about 1 more tbls cilanto and probably 2 tsp of cumin to mine. I also think that chopping up some avacado in this would be good! I've had better tortilla soup, but this is the ony recipe I have.
