Zuppa Toscana (Olive Garden)

List of Ingredients
3 links mild Italian sausage
3/4 cup chopped onion
2-4 slices bacon, thick or thin sliced
2-3 cloves minced garlic
28 ounces chicken broth
2 medium diced potatoes
2 cups coarsely shredded kale
1 cup heavy cream
salt & pepper to taste
Recipe
Cook sausage links, allow to cool, slice into 1/4 slices and set aside.
Sauté onions, bacon and garlic until tender; spoon off grease if necessary. Add broth and potatoes; simmer until potatoes are tender. Add kale, cream and sausage slices. Warm to serving temperature.
If you like the kale less crispy, cook over low heat a few more minutes, but do not allow to boil.
Serve with crusty bread and a side salad.
(cabbage may be substituted for the kale, but kale makes a much prettier dish)
