4 eggs
1 can whole kernel corn (15 1/4 oz) drained
1 can cream style corn (14 3/4 oz)
1 1/2 cups corn meal
1 1/4 cups buttermilk
1 cup butter or margarine, melted
2 can chopped green chilies, 4 oz each
2 med onions chopped
1 tsp baking soda
3 cups shredded cheddar cheese, divided
6 oz pimentos, drained
jalapeno pepper rings, optional
Recipe
Beat eggs in a large bowl; add all ingredients, saving one cup of cheese for later use.
Pour into a greased 13x9x2 dish. Bake uncovered at 325 for 1 hour. Top with remaining cheese.. Let stand for 15 mins before serving. Garnish with pepper rings if desired.
