Cinco de Mayo: Churros

1 c. water
1/2 c. butter
1/4 tsp. salt
1 c. flour
3 eggs
1/4 c. sugar
1/4 tsp. cinnamonRecipe
Heat water to boiling with salt and butter. Stir in flour. Stir vigorously over low heat until forms a ball, about 1 minute. Remove form heat. Beat in all eggs at one time until smooth.
Spoon mixture into a decorator's tube with large star tip. Squeeze mixture into hot oil (350 degrees). Turn when brown, about 2 minutes.
Drain on paper towel and roll in sugar-cinnamon mixture.
Makes about 24 crullers, depending on size.
