Recipe Introduction
Recipe came from the Good Housekeeping Cook Book that belonged to my mom who got it from her mother-in-law. It's the eleventh printing in October 1962.
List of Ingredients
2 cups sifted all-purpose flour
3 tablesp. white vinegar plus enough water to make 2/3 cup
1 teasp. baking soda
1 teasp. salt
1/4 cup melted shortening
3/4 cup sugar
1 cup halved or coarsely chopped raw cranberries
1 egg
1/3 cup orange juice
1 cup chopped nuts
1 teasp. grated orange rind
Recipe
Start heating oven to 350*F. Grease 9" x5" x3" loaf pan. Into mixing bowl, sift flour, soda, salt, sugar. With fork, beat egg; stir in orange juice and rind, vinegar, water, shortening. Add, all at once, to flour mixture; stir just until all flour is moistened. Add cranberries and nuts; turn into pan. Bake 60-70 min., or until done. Cool in pan 10 min.; remove. Cool overnight before slicing.
My note: I mixed the flour, soda, salt and sugar together with a fork. I used fresh orange juice and I doubled the recipe.
