Luau: Festive Hawaiian Rice

1/4 c. butter, clarified
2 shallots, chopped
4 scallions, green and white parts, chopped
2 c. uncooked rice
2 c water
2 cups coconut milk, unsweetened
1 c green peas
1/4 c. shredded coconut, toasted
1/2 cup pineapple tidbits
1/2 c. golden raisins, optional
1/4 macadamia nuts, chopped
Recipe
In 2 tablespoons butter, saute shallots and scallions until translucent and continue cooking for 2 minutes. Add rice and stir well until coated. In a medium saucepan, heat water and coconut milk to a boil. Add to rice mixture and stir. Cover and reduce heat to a simmer. Cook for 20 minutes or until all the liquids have been absorbed. Remove from heat and fluff with a fork. In the remaining butter, saute peas lightly, then incorporate into rice. Top with toasted coconut, pineapple and macadamia nuts.
Serves 6 to 8.
