Mardi Gras Cake

NOTE: This is not the King Cake as served on the 12th day, but one of the other many cakes that are popular with this Louisiana celebration.
List of Ingredients
2/3 cup butterscotch pieces
1/4 cup water
2¼ cups flour
1 tsp. salt
1 tsp. soda
1/2 tsp. baking powder
1 cup sugar
1/4 cup brown sugar
1/2 cup shortening
3 eggs
1 cup buttermilk
FILLING FOR CAKE:
1/2 cup sugar
2 tbsp. flour
1 cup canned milk
1/3 cup butterscotch chips
1 beaten egg yolk
1 cup chopped pecans
1 cup coconut
Recipe
Melt butterscotch pieces in water in a saucepan. Cool.
Combine flour, salt, soda and baking powder; set aside. Add sugar and brown sugar gradually to shortening, creaming well. Blend in eggs, blending well after each addition.
Add butterscotch pieces solution; mix well. Add dry ingredients alternately with buttermilk beginning and ending with dry ingredients. Blend well after each addition. (With mixer, use a low speed.)
Put batter in two 9-inch greased and floured round layer cake pans. Bake at 375° for 30-35 minutes. Cool; spread "Mardi Gras" filling between layers and on top to within 1/2 inch of edge. Frost sides and top edge with Cream Cheese frosting.
Filling: Mix sugar, flour, canned milk, water, chips and egg yolk. Cook until thickened. Remove from heat, stir in nuts and coconut. Fill between the layers of cake.
