Christmas/Easter: Cheese Custard Pie

List of Ingredients
1 baked pie shell (when cooled, brush with egg white)
1 3/4 cup milk, scalded (180F)
1 cup sharp cheddar cheese, grated
1/2 tsp. salt
1/4 tsp. paprika
1/2 tsp. grated onion
a few grains of cayenne
3 eggs (use one of the egg whites to brush on the pie shell)
Recipe
Melt grated cheese in scalded milk; add seasonings and mix well. Beat in eggs, one at a time. Pour into pie shell and bake 45 minutes at 325F, or until knife inserted in center comes out clean.
