    St. Pats: Irish Whiskey Cake

    List of Ingredients

    1-1/2 sticks (6 ounces) margarine
    3/4 cup superfine sugar
    1-1/2 cups white flour
    1 cup golden raisins
    3 eggs, beaten
    2-1/2 tablespoons Irish whiskey
    1/2 level teaspoon baking powder

    ICING:
    1-1/2 cups confectioner's sugar
    Juice of 1 orange
    A little candied orange peel

    Recipe

    Cream the margarine and sugar in a large bowl. Add the sifted flour and the raisins gradually. Add the eggs and mix well. Add the whiskey. Add the baking powder, folding it in gently. Mix carefully just until blended.

    Pour the batter into a greased loaf tin. Bake in a preheated, 350-degree oven for 1 hour.

    To make the icing, stir together the confectioner's sugar and the orange juice. Sread this over the cake and scatter a little candied peel over the icing.
