    Amish Wilted Spinach

    List of Ingredients

    four slices bacon, cooked crisp
    3 tablespoons bacon drippings
    2 tablespoons flour
    1 cup hot water
    1 tablespoon sugar
    1 tablespoon vinegar
    salt & pepper to taste
    2 hard cooked eggs, cut in quarters
    1 pound fresh spinach, washed and tough stems removed

    Recipe

    In the pan that you cooked the bacon, mix the drippings with the flour and stir over medium heat for several minutes until bubbling. Pour in the hot water, sugar and vinegar and cook until thickened. Taste and add salt & pepper.
    Pour the hot mixture over the spinach and toss until wilted. Garnish with crumbled bacon and hard cooked eggs.
