1 head fresh broccoli
3 tbsp. butter
1 tbsp. flour
salt to taste
white pepper to taste
1 cup milk
1/2 cup grated cheddar cheese
Topping:
1 tbsp. olive oil
1 clove garlic, minced
dash of salt
1/2 cup whole wheat bread cubes

Cut broccoli into good-size florets & place in baking dish.
Make a cheese sauce from the next six ingredients, by melting butter in small saucepan, add flour & seasonings and blend until smooth - cook over medium heat a coupla minutes. Add milk & cheese - continue cooking & stirring until cheese melts & sauce begins to thicken. Pour over broccoli florets.
Heat olive oil & garlic in a small skillet until fragrant. Add bread cubes and sauté, stirring constantly, until cubes are crisp. Sprinkle crispy cubes over broccoli & bake at 350 about 20 minutes, or until heated through.
