    List of Ingredients




    1/3 C Butter, softened
    3/4 C Sugar
    2 Eggs
    1 Can (5 oz.) Evaporated Milk
    1 tsp Vanilla Extract
    2 C Butternut Squash, cooked and mashed

    Topping:

    1/2 C Rice Krispies
    1/4 C Brown Sugar, packed
    1/4 C Pecans, chopped
    2 T Butter, melted

    Recipe



    In a mixing bowl, cream the butter and sugar. Beat in eggs, milk, and vanilla. Stir in squash. (Mixture will be thin.) Pour into a greased 11 X 7 X 2 baking pan. Bake uncovered for 45 minutes or until almost set. Combine the topping ingredients and sprinkle over casserole. Return to the oven for 5 to 10 minutes or until bubbly.
