Calico Squash

2 c. yellow squash, sliced
1 c. zucchini, sliced
1 med. onion, chopped
1/4 c. water
2 c. crushed crackers
1/2 c. margarine, melted
1 can cream of celery soup
1 can sliced water chestnuts
1 large carrot, grated
1 jar diced pimiento
1 tsp. sage
1/2 c. mayonnaise
1 c. cheddar cheese, shredded
Recipe
Boil squash, zucchini, onion and scallions for 6 minutes. Mix together crackers with melted butter. Mix together the soup, water chestnuts, carrot, pimento, sage and mayonnaise. Put 1/2 of crumbs in bottom of baking dish. Combine sauce with squash and zucchini mixture and spoon over crumbs. Sprinkle with cheese and remaining crumbs. Bake at 350° for 30 minutes or until lightly brown.
