Carrot Casserole

1 cup cooked rice
2 cups milk
5 medium carrots, shredded
1 teaspoon salt
1 tablespoon dark brown sugar
2 eggs
3 tablespoons butter
1/3 cup cracker crumbs or fine bread crumbs
Recipe
Combine rice, milk, carrots, salt, sugar and eggs. Pour into a well-buttered 1½-quart casserole.
Melt butter in a separate pan and stir the crumbs into it. Sprinkle over top of casserole. Bake in 375-degree oven 40 minutes or until lightly browned.
Raisins may be added into the carrot mix.
