8 Plum or Roma Tomatoes, halved
12 cloves Garlic, peeled
1/4 cup Extra virgin Olive Oil
3 Bay Leaves
Salt and freshly ground Black Pepper
Sprinkling of Granulated Sugar
3 Tbsp. fresh Oregano, chopped

Pre-heat the oven to 450° degrees and select an oven-proof baking dish that will accommodate the tomato halves in a single layer.
Place the halved tomatoes in the dish and push the peeled, but whole garlic cloves between them.
Brush the tomatoes with the extra virgin olive oil, add the bay leaves and season with salt and pepper. Sprinkle the sugar sparingly over the top.
Bake for about 45 minutes or until the tomatoes have softened and are sizzling in the pan. The tomatoes should be a bit charred around the edges.
Garnish the dish with the oregano leaves and serve warm. Wonderful with roast beef or pasta.
