    Green Beans w/Tomato Mushroom Sauce

    List of Ingredients

    2 generous Tbsp dried wild (boletus) mushrooms
    1 16oz can plum tomatoes, drained, seeded, crushed
    1/2 cup hot water
    1/4 cup tomato paste
    3 Tbsp light bodied olive oil
    1/4 cup chicken broth
    1 medium onion, minced
    2 lbs fresh green beans, trimmed and halved
    2 large garlic cloves, minced
    2 1/2 tsp dried basil
    2 tsp sugar

    Recipe

    Rinse mushrooms quickly, drain well. Crush into small bowl. Add hot water. Let stand 30 minutes. Strain and reserve water.

    Pour oil into medium skillet. Add onion & brown quickly. Add garlic, cook several seconds. Add all but sugar and beans (including mushroom liquid). Boil till thickened about 5 minutes. Remove from heat. Add sugar, salt and pepper.

    Cook beans, drain. Add sauce and heat through.

    Makes 8 – 10 servings.

    Note: Any dried mushrooms will do if you cannot find boletus. It’s the strong woodsy flavor of the soaking water that adds so much.
