1 10 ounce pkg. frozen chopped spinach
4 beaten eggs
1/4 teaspoon salt
1/8 teaspoon pepper
1 cup cream
2 cups grated mild cheddar
3/4 to 1 cup fine dry bread crumbs
2 tbsp. butter

Butter a 9" glass baking dish. Thaw spinach and squeeze out excess moisture. Combine eggs, salt, pepper and cream; stir in spinach and cheese. Pour into baking dish, top with crumbs, dot with butter and sprinkle generously with paprika. Bake at 375 degrees F for 35 to 50 minutes (start checking at 35 minutes). Don’t over-bake.
