    4 slices bacon
    1 to 1 1/2 c leftover spinach souffle
    4 eggs
    2 T whipping cream
    1/4 c shredded mozzarella cheese
    1/4 c shredded white cheddar cheese

    Recipe



    In a 12" cast iron skillet, cook bacon until crisp. Drain on paper towels.
    Crumble bacon. Remove excess grease from pan. In the same pan, placed over low heat, reheat leftover spinach souffle. Stir and spread evenly across pan. Sprinkle bacon evely across spinach. Beat together eggs and whipping cream and evenly pour over spinach and bacon. When the edges start to look cooked, sprinkle the cheese over and put the whole pan under the broiler until the rest of the eggs are cooked. Watch carefully!
