    Spinach Soufflé from Diane

    List of Ingredients

    1 c. cottage cheese
    3 oz. cream cheese, softened
    2 eggs
    3 T. flour
    2 T. melted butter
    3/4 tsp. salt
    1/8 tsp. pepper
    1/8 tsp. nutmeg
    1 10 oz. pkg. spinach, thawed and drained well

    Recipe

    Blend together cottage cheese, softened cream cheese, eggs, flour, melted butter, and seasonings. Add spinach. Pour into a buttered quart souffle dish or deep casserole dish. Set dish in pan of hot water. Bake 350° for 70 minutes or until set in center.
