Summer Squash and Zucchini Casserole

2 med. yellow summer squash, diced
1 med. zucchini, diced
1 sm. onion, chopped
3/4 c. light cheddar cheese, grated
1/4 c. Parmesan cheese, grated
1 1/2 c. lowfat milk
1 egg, beaten
1 c. Original Minute Rice or Minute Premium Long Grain Rice
1/2 tsp. Italian seasoning
1/4 tsp. salt
1/8 tsp. pepper
Recipe
Conventional Oven: Combine all ingredients in large bowl; mix well. Pour into greased 9-inch square baking dish. Bake at 375° for 35 minutes or until liquid is absorbed. Makes 6 servings.
Microwave: Combine all ingredients in large bowl; mix well. Pour into greased 9-inch square microwavable dish. Cook at HIGH 20 minutes or until liquid is absorbed. Makes 6 servings.
