You can make a jar of toasted onions and keep it refrigrated for months. And keep the oniony olive oil..can be used to fry other dishes..it spice up meat dishes very well.

Peel & slice small red onions (about 10 pcs). Fry sliced onions over medium heat with olive oil (1 tbsp) until golden brown. Stirring continously to prevent it from burning.
(dip onions in water before slicing, prevents teary eye.)
