Unfried Green Tomatoes

This is not supposed to be heavily coated, just dusted- but add more if you want! Panko is about 2 points per half-cup, so add points accordingly.
List of Ingredients
1 pound green tomatoes
1/4 cup whole wheat panko
8 sprays olive oil cooking spray
1 tsp Creole seasoning
1 egg white(s)
Recipe
1.Process the Panko with the Creole Seasoning until quite fine grained.
2. Spray a pan with Olive Oil Spray.
3. Slice up the green tomatoes. (Allow about one tomato per serving.)Paint the "up" side lightly with egg white.
4. Sprinkle with the Panko.. They are not "breaded" but will have crunch and texture.
5. Spray the tomatoes with Olive Oil Spray.
6. Bake at 400 degrees until the tomato is tender and the top is crisp.
Serve with Louisiana Hot Sauce. Typically served with eggs and grits but equally good as side dish with chicken, fish, etc. If REALLY hungry.
Makes 4 servings, at 1 WW point each.
