2 Tbls. butter
6 medium zucchini, sliced
2 Tbls chopped fresh tarragon, or 2 tsp. dried
1 1/4 cups grated parmesan cheese
1 cup half and half
2 eggs

Preheat oven to 350 degrees. Butter a 9 inch diameter deep dish pie plate or a similar shallow baking dish.
Melt butter in a heavy skillet over medium-high heat. Add zucchini; saute until golden. Season with salt and pepper.
Layer half of zucchini in prepared dish. Sprinkle on half of the tarragon and 1/2 cup of the parmesan. Repeat layering with zucchini, tarragon and another 1/2 cup of the cheese.
Combine half and half and eggs in a bowl and season with salt and pepper. Pour over zucchini. Sprinkle with remaining 1/4 cup of cheese.
Bake until gratin is done in the center about 35 minutes.
