    Low Carb Vegetarian Breakfast Casserole

    List of Ingredients

    7 jumbo eggs
    2 - 3 ounces heavy cream
    8 oz sharp cheddar, grated
    3 scallions, sliced, including green tops
    2 - 4 oz diced green chiles
    1 - 2 cups diced canned tomatoes, drained well & patted dry with paper towels.

    Recipe

    Combine eggs & cream, whip until frothy.

    Sprinkle a thin layer of cheese in bottom of greased 9x9 casserole dish. Evenly sprinkle scallions over cheese, followed by another layer of cheese. Layer tomatoes and chiles followed by the remainder of the cheese.

    Pour egg/cream mixture over all and bake at 350F about 40-45 minutes or until eggs are set and top begins to brown a bit.

    Allow to set up a few minutes before serving.

    Garnish with sour cream, salsa & avocado slices.
