    List of Ingredients

    1 t. olive oil
    1 carrot, ch (1/2 c.)
    1 sm onion, ch. (1/2 c.)
    1 clove garlic, minced
    1 c. uncooked rice
    1 c. chicken broth
    4 drained artichoke hearts--quartered
    1/2 c. frozen peas. thawed
    1/4 t. pepper
    1/2 t. salt
    2 T. ch. mint (I can't find this until summer)
    1 T. fresh oregano (or 1 t. dried)
    1 T. grated orange peel
    1 T. Parmesan cheese

    Recipe

    In pot, heat oil over med. heat. Add carrot, onion and garlic. Cook until just soft, about 2-3 min. Add rice, stirring until coated with oil. Add 1 c. water, broth, artichokes, salt and pepper Bring to boil. Cover and reduce heat to low. Simmer until rice is tender and liquid is absorbed--16-20 min. Remove from heat, stir in peas, mint, oregano orange zest and Parmesan.

    Prep time 20 min.--Serve in 40 min.
