Apple-Cinnamon Muffins

1 1/2 cups all-purpose flour
1/3 cup granulated sugar
2 tsp baking powder
1 tsp ground cinnamon
1/2 tsp salt
1 egg
1/2 cup milk
1 cup finely chopped apple (from 1 large peeled and cored apple)
1/4 cup butter, melted
1/3 cup chopped nuts (any kind)
1/4 cup packed brown sugarRecipe
Preheat oven to 375 degrees. Spray 12 muffin pan cups with nonstick cooking spray.
In a large bowl, combine flour, granulated sugar, baking powder, 1/2 tsp of the cinnamon, and the salt. Mix well and set aside.
In another bowl, beat together egg and milk, then stir in apple and melted butter.
Add the egg mixture all at once to the flour mixture and stir until all of the flour is just moistened (the batter will be very stiff). Spoon the batter into the muffin cups, filling each about 2/3 full.
In a small bowl, combine nuts, brown sugar, and the remaining 1/2 tsp cinnamon. Sprinkle over the tops of the batter.
Bake 15 to 20 minutes, or until a toothpick inserted in the center of a muffin comes out clean. Turn the muffins out of the pan immediately onto a wire rack. Let the muffins cool completely and store them in an air-tight container.
