    Easy Golden Crunch Cake

    1 cup all-purpose flour
    1 tsp baking powder
    1/4 tsp salt
    2 large eggs
    3/4 cup granulated sugar
    1 1/2 tsp vanilla extract
    1/2 cup milk
    2 tbsp butter, melted

    Topping:
    1/2 cup packed light brown sugar
    1/4 cup butter
    1/4 cup canned evaporated milk
    1/2 cup lightly packed shredded sweetened coconut
    1/2 cup chopped walnuts, pecans, almonds or hazelnuts

    Preheat oven to 350 degrees. Grease an 8-inch square baking pan.

    In a medium bowl, stir together flour, baking powder and salt. In a large bowl, with electric mixer on medium speed, beat eggs until frothy, about 30 seconds. Beat in sugar and vanilla. Add flour mixture and beat just to blend. Add milk and melted butter and beat just until smooth. (Batter will be thin.)

    Pour batter into the pan. Bake about 25 minutes, or until top springs back when lightly touched and a toothpick inserted in the center comes out clean. Remove cake from oven and preheat broiler.

    Prepare topping: In a small saucepan, combine brown sugar, butter and evaporated milk. Place over medium heat and bring to a simmer, stirring constantly. Remove from heat and stir in coconut and nuts. Spoon mixture over hot cake. Broil, watching carefully, 1 to 2 minutes, or until bubbly and golden brown. Cool cake in a pan on a wire rack.

    Variation:

    Chocolate Marble Crunch Cake

    Prepare batter as above. Pour half of the batter into a medium bowl; set aside. Combine 4 tsp unsweetened cocoa powder and 1/4 tsp baking soda in a sieve; push through onto batter in one bowl. Stir to blend ingredients. Spoon vanilla batter into the four corners and center of prepared pan. Intersperse with chocolate batter. With a dull knife, swirl batter to create a marbleized effect. Bake as above and prepare boiled topping as above. After removing from broiler, sprinkle top with about 1/2 cup regular or mini chocolate chips. Cool as above.
