    Fresh Strawberry Almond Pie

    Crust:
    1 1/2 cups crushed shortbread cookies
    1/3 cup butter, melted
    1/4 cup finely chopped blanched whole or slivered almonds

    Filling:
    6 cups (3 pints) strawberries, hulled
    1 cup sugar
    3 tbsp cornstarch
    1/3 cup water
    1/2 tsp almond extract
    1/4 tsp salt

    Heat oven to 350 degrees. In small bowl stir together all crust ingredients. Press onto bottom and up sides of a 9-inch pie pan. Bake for 8 minutes. Cool completely.

    Mash enough strawberries to equal 1 cup. In 2-quart saucepan combine sugar and cornstarch. Stir in mashed strawberries and water. Cook over medium heat, stirring constantly, until mixture thickens and comes to a full boil. Boil 1 minute; remove from heat.

    Stir in almond extract and salt. Cool 10 minutes.

    Fill baked crust with remaining strawberries; pour cooked strawberry mixture over strawberries. Refrigerate at least 3 hours; garnish with sweetened whipped cream. Serve immediately.
