    Cornbread-Crusted Spicy Beef Casserole

    If you are using Master Meat Sauce that you've thawed, drain excess liquid from it so the cornbread topping will cook just right and not get soggy.

    List of Ingredients




    4 cups Master Meat Sauce
    1 can (15 oz) red kidney or pinto beans, drained and rinsed
    1 can (7 oz) sweet corn, drained
    1 pkg (8 1/2 oz) corn muffin mix
    1/2 cup shredded jalapeno-Monterey Jack cheese
    1 tsp chili powder
    1/4 cup chopped scallions, plus more for garnish
    sour cream
    cheddar cheese

    Preheat oven to 375 degrees. Coat a 9-inch square baking dish with nonstick cooking spray.

    In the baking dish, combine the Meat Sauce, beans and corn.

    Prepare corn muffin mix according to package directions. Stir in cheese, chili powder, and the 1/4 cup chopped scallions. Spread over the meat mixture. Bake 35 to 40 minutes, or unitl a toothpick inserted in the cornbread topping comes out clean. (If the top browns too quickly, cover the pan with aluminum foil. Garnish each serving with sour cream and chopped scallions. Serve with chunks of cheddar cheese.
