    Almost Blegian Chocolate Mousse

    1 cup semisweet chocolate chips
    1 pint heavy cream
    1/8 tsp instant coffee granules
    1 tsp warm water
    grated chocolate (optional)

    Recipe



    In a small saucepan , melt chocolate chips over low heat until smooth, stirring constantly. Set aside until slightly cooled.

    In a large bowl, with an electric mixer on high speed, beat heavy cream until light and fluffy. With a spatula, gently fold the chocolate into the whipped cream.

    In a small cup, dissolve instant coffee in the water. Gently fold into the chocolate mixture until just combined. Cover and refrigerate at least 2 hours. Spoon into serving dishes and garnish with grated chocolate, if desired, before serving.
